The Best Crusted Salmon Ever

Ingredients for the Salmon and Rub:

  • 1 Side of Wild BC Sockeye Salmon – Fillet or 4-6 portions

  • 2 tbsp Brown Sugar

  • 1 tsp Smoked Paprika

  • ½ tsp Chipotle Powder

  • ½ tsp Garlic Powder

  • Salt and Pepper

  • 2 tbsp Grainy Dijon Mustard ( ½ tsp per piece if you are using portions )


    For the Crust

  • ¼ cup Panko Breadcrumb

  • ½ cup Chopped Flat Leaf Parsley

  • 2 tbsp Butter

  • Lemon Zest, Lemon and Parsley to garnish

Let’s begin!

  1. Preheat the oven to 400°F. Rinse and pat dry the salmon. Portion the Wild BC Salmon to the sizes you wish or use a fillet.

  2. Coat the salmon with the grainy mustard.

  3. Mix together the dry ingredients for the rub and dust the flesh of the salmon.

  4. Place parchment onto a baking sheet and place the salmon on that.

  5. In another bowl, mix together the panko breadcrumbs, butter and parsley. Layer it on top of the Salmon. Flatten it down and pat it on well.

  6. Place into the oven and bake for 10 min. Remove from the oven and finish with lemon zest, juice of the lemon and parsley.
